What is an operation?

Operations are the means by which you can have your users latch on and off different functionalities of your service. For example, if you were an online banking service, you could have one operation associated to the authentication process, another associated to making international money transfers and a third one for money transfers above a certain threshold. Your users would see three entries under your service name in their mobile apps, and independently latch them.
